Pork casserole

Recipe for 4-6 people.

Ingredients:

1 tablespoon of oil.

1 clove of garlic, crushed.

1 teaspoon of paprika or ground pimentón.

2 leeks, coarsely chopped.

2 carrots, peeled and cut into 3 cm pieces.

500 g of pork meat, cut into 3-4 cm pieces.

1 piece (200-250 g) of smoked ribs, halved.

Salt and pepper.

1/2 bunch of herbs (parsley, oregano, bay leaf, and celery, tied).

1/4 of curly cabbage, in large pieces or 250 g of Brussels sprouts.

4 medium potatoes, peeled and halved.

Parsley sprigs for garnish.

Preparation:

1. In a large pot heat the oil over medium heat, add the garlic and cook for 30 seconds; sprinkle the paprika or ground pimentón on top. Add the leeks, carrots, pork meat, and smoked ribs. Add 1 tablespoon of cold water to prevent the meat from burning during cooking and cover. Reduce the heat and cook on low for a few minutes.

2. Pour 2 liters of cold water, salt to taste, and the bunch of herbs; cover again and cook for 1 more hour or until the meat is tender.

3. Add the cabbage or Brussels sprouts and the potatoes; continue cooking, covered, for 30 more minutes. Remove the bunch of herbs, adjust seasoning, and remove from heat. Serve immediately garnished with parsley sprigs.
