Broccoli and coconut milk soup

Recipe for 3 people.

Ingredients:

½ large onion julienned.

2 cups chopped broccoli.

¼ red bell pepper.

½ cup chopped butternut squash.

1 garlic clove cut in half lengthwise.

1 teaspoon coconut oil.

½ cup coconut milk.

2 cups purified water.

Pink or sea salt to taste.

Preparation:

1. In a small pot over low heat, put the coconut oil, when hot add the onion, garlic, and salt.

2. Cook over low heat, stirring constantly until the onion is tender and lightly browned.

3. Add the rest of the ingredients and cover the pot.
